Is your Christmas shopping finished? We still have a few people to shop for but rather than battle the malls I opted for a healthy homemade gift.
Jonah and I cooked up a batch and while packing some away as gifts some of the almonds happen to slip in my mouth. Plus, Jonah couldn’t resist and had a small pile of almonds for himself.
They are super tasty and healthier than the sugar/salt loaded ones you’d find at the store.
Cinnamon & Coconut Sugar Almonds
What you’ll need:
1 cup coconut sugar
1/2 cup filtered water
4 cups raw almonds
1 Tablespoon ground cinnamon
1 Teaspoon sea salt
1. Line a rimmed baking sheet with wax paper. Set aside.
2. In a large skillet combine the sugar and water over medium heat. Bring to a boil.
3. Add the almonds, continue to cook, stirring often until the liquid has completely evaporated, about 5 minutes
4. Add the cinnamon and salt, stirring to evenly coat the almonds. Spread the almonds over the prepared baking sheet. Allow to dry for 30 minutes.
